The launch of the latest gem from Roe & Co, the Roe & Co Solera Single Malt Irish Whiskey, the first-ever single malt whiskey produced by the Roe & Co distillery. Released on 20th February 2024, this isn’t just another bottle of whiskey; it’s a journey into a world of incredible flavours and innovative techniques. Using the solera method, a rarity in Irish whiskey, Roe & Co has created a vibrant and evolving whiskey that promises to delight your taste buds with every sip.

The Solera Magic: An Ever-Evolving Flavour Profile

A solera is a dynamic production method which incorporates fractional finishing of a mixture of ages and cask finishes. The whiskey is finished in one layer, known as a criadera, of the solera before a portion of it is cascaded through to the next layer. Each criadera uses a different cask type to create an ever-evolving flavour profile over time.

The first layer comprises of both refill and first fill American Oak ex-Bourbon barrels, giving notes of sweetness and toffee, a portion of the whiskey is then cascaded through to the next layer of new Alligator charred American oak barrels that give the whiskey toasted and roasted notes, from there the whiskey moves into Chestnut barrels with two custom toasting profiles giving nutty and spicy notes and finally the fourth layer of our criadera uses four different types of Sherry casks to create layer upon layer of vibrant flavour.
